In Sevilla, where you start, it's not too cold in winter, usually between 8°C and 16°C. It's usually sunny but it can rain, so be ready for that.
The next regions, Guillena and Almadén de la Plata, are similar, but there might be more sun and less heavy rain.
In Monesterio and Fuente de Cantos, it gets a bit colder, with temperatures up to 13°C and down to 3 or 4°C. There's usually sun, but weather can change quickly with more rain and occasional snow.
Salamanca in the North gets even colder, with highest temperatures at 8°C and it can hit freezing point. It often rains and snows here, and sometimes there's freezing rain.
Zamora and Montamarta usually have thick clouds and a good amount of rain. It's not much warmer, with temperatures going up to 10°C and down to 1 or 2°C.
As you get to Galicia with towns like Ourense and Silleda, it rains even more and it's mostly cloudy. Temperatures stay around 10°C for the high and 3°C for the low.
Finally, at the journey's end in Santiago de Compostela, you'll find lots of rain and cloudy skies.
In summary, the weather on Vía de la Plata changes a lot, it gets colder and rainier as you go north. But there's also a lot of sun.
